Treat everyone to tasty chicken fajitas with The Batch Lady’s simple recipe

THIS week, I bring you two super dishes – simple to make, and there’s little washing-up.

I make fajitas at least once a week. Fajita bags are a great no-cook bag to double-up on – I always have one in the freezer for days when I’m rushed off my feet.

This week’s top tip is about hidden veg. It can be hard with little ones to get the veggies in. Grated carrot is a great one to add in as it breaks down and the kids can’t spot it. I add it to loads of dishes. Sweetcorn and peppers are also great for hiding.

Chicken fajitas

Serves 4

Prep time: 5 minutes
Cook time: 10-12 minutes

YOU NEED:

  • 140g frozen diced onions
  • 350g frozen sliced peppers
  • 4 chicken breasts, sliced
  • 30g packet fajita mix
  • To serve:
  • Tortilla wraps
  • Guacamole
  • Sour cream
  • Salad

METHOD: Add all the ingredients to a large freezer bag and mix well.

Ready to freeze: Seal and freeze the bag flat alongside a packet of tortilla wraps.

Ready to cook: Remove the bag and the tortilla wraps from the freezer and allow them to fully defrost. Once defrosted, place a large deep-sided frying pan on the heat.

Add a good splash of oil and, once hot, add in the contents of the fajitas bag. Fry until the chicken is cooked through and veggies are soft.

Remove from the heat and spoon into your wraps, then top with guacamole, sour cream and salad.
