Whip up this tasty coronation chicken recipe in just 20 minutes

When such a delicious dish is so simple to make, there's no excuse for using shop-bought sauce

This coronation chicken is quick and easy to make

Ingredients:

For the sauce

1tbsp sunflower oil

1 onion, finely chopped

1/4 red chilli, diced

1tbsp medium curry powder

1/2tsp tomato purée

1tbsp white wine vinegar

2tbsp apricot jam

Squeeze lemon juice

150g mayonnaise

3tbsp Greek yoghurt

To serve

450g cooked chicken, sliced

100g grapes, halved

3 apricots, halved

Pea shoots, to garnish

30g toasted flaked almonds

1/2 red chilli, sliced

Method:

  1. To make the sauce, heat the oil in a saucepan. Add the onion and chilli and fry gently for 8-10 minutes until soft.
  2. Add the curry powder, purée, vinegar, apricot jam and 3tbsp water. Stir over the heat until boiling and the jam has melted, then remove from the heat and add the lemon juice.
  3. Transfer to a bowl, then chill in the fridge.
  4. When the sauce is cold, add the mayonnaise and Greek yoghurt. Season well, then add the chicken and grapes.
  5. Spoon on to a large plate, add the apricots and scatter with pea shoots, flaked almonds and chilli.
