Cooking experts at revealed that keeping olive oil in warm, well-lit places (such as near your stove) may cause a “mustier flavour” that will become vinegary as time goes on.
To protect your oil’s flavour, you should keep it somewhere dark and cool – with the cap tightly screwed on.
Oxygen, light and heat are the three main enemies of olive oil, according to GHI – so a hob side position really isn’t a good idea.
And those who think their olive oil will keep for ages are also mistaken.
Unlike wine, olive oil doesn’t get better with age and you should make sure you use any open bottles within six months – before the taste starts to deteriorate.
However, an unopened bottle can last for up to two years if you keep it between 14C and 18C and in a dark place.
The GHI also advise that Extra Virgin Olive Oil should never be cooked with, as the heat will destroy its strong flavour.
