MasterChef’s John Torode and Lisa Faulkner’s Christmas chocolate pudding and cocktails

An alternative to Christmas pudding and a twist on two cocktail faves - it's just the thing to finish off a wonderfully indulgent day

YOU'VE been eating pretty much continuously since the kids burst into your bedroom at 5am - but everyone knows you have a separate stomach for dessert, right?

Lisa’s Self-Saucing Chocolate Pudding

Serves 6-8

Prep time 15 mins, plus chilling overnight

*125g plain flour

*60g caster sugar

*tsp baking powder

*2tbsp cocoa powder

*120ml milk

*40g butter, melted

*1 egg

*2 drops vanilla essence

*60g chopped walnuts

For the topping

*100g muscovado sugar

*2tbsp cocoa powder

On Christmas Eve

1 Grease a 1L pudding basin. Sift the flour, a pinch of salt, caster sugar, baking powder and cocoa into the bowl. In another bowl, combine the milk, melted butter, egg and vanilla.

2 Mix the two sets of ingredients together and add the nuts. Pour the mixture into the greased pudding mould, smoothing out the top. Cover with cling film and put in the fridge overnight to set.

On Christmas Day

1 Preheat the oven to 180ºC/160ºC fan/gas mark 4. Remove the cling film and sprinkle the brown sugar and cocoa over the pudding and carefully pour 200ml boiling water on top of the mixture.

2 Place in the oven and bake for 35-45 minutes, or until the pudding is puffy and firm on top.

3 Remove from the oven, let it stand for 10 minutes then scoop into individual dishes. Serve with ice cream, pouring cream or a dollop of brandy butter.

Lisa’s Apple Martini

Makes 2

*3 shots vodka

*1 shot spiced white rum

*2 shots apple juice

*1 shot Calvados

*1 shot lemon juice

*Splash sugar syrup or 1/2tsp sugar

*2 slices Granny Smith, to serve

1 Fill a cocktail mixer or large glass with ice and add all the ingredients except the sliced apple.

2 Give it a good stir. Leave to sit in the ice for a few minutes then stir again. Strain into chilled glasses and serve each with a slice of apple. Add a couple of ice cubes if you like.

John’s Aperol fizz

 

Makes 2

*2 cubes sugar

*Orange bitters, optional

*2 shots gin

*2 shots Aperol

*Champagne or prosecco, to serve

1 Take the sugar cubes and add a few drops of orange bitters, if using.

2 In two tumblers, add 1 shot gin, 1 shot Aperol, 1 ice cube and 1 flavoured sugar cube to each. Top with fizz.
