Peta Todd shares her easy and delicious recipe for spinach, feta and poppy seed parcels
These little treats are packed with goodness and make a perfect snack
THESE little parcels are filled with goodness and perfect as a snack or in lunch boxes.
They can be any shape or size, so have fun folding and wrapping them with the kids.
And cutting corners a little by using shop-bought pastry saves time yet these will still taste great.
(Serves 4-5)
YOU NEED:
Butter
1 onion, finely chopped
2 cloves of garlic, crushed
1 kg bag of baby spinach, chopped
75g feta cheese, crumbled
Juice of half a lemon
4 sheet of pre-rolled filo pastry
4 tbsp poppy seeds
METHOD: Pre-heat oven to 180C and add some butter, the onion and garlic to a frying pan.
Cook until soft, but not brown.
Add the spinach and stir until it wilts.
Cook until the liquid reduces and empty into a bowl, adding the feta and lemon juice. Mix together.
Melt some more butter and brush onto the filo pastry sheet, layer another on top.
Spoon in some of the spinach mix and fold the pastry into your desired shape.
Brush the parcel with butter and sprinkle with poppy seeds.
Repeat to make more parcels.
Place all the parcels into the oven and cook for 15-20 minutes.
