Four budget-friendly summer desserts that are perfect for parties
IN the mood for something sweet?
Summer parties can put a strain on your budget, so it really helps if everyone brings a dish.
Treat your hosts to one of these simple but delicious summer party desserts . . .
PEACHY KEEN: Try a refreshing and yummy “no bake” peach cheesecake.
Crush biscuits and melted butter together and push into a cake tin to create the base.
While it’s chilling in the fridge, whip some cream cheese and icing sugar.

Pour this over the now-chilled biscuit base, then add a layer of drained tinned peaches.
Then add another layer of cream cheese mixture and more peaches — and you’re done.
Easy as that.
SLICE OF SUMMER: If you don’t have a lot of baking ingredients, head to Asda for the vanilla sponge cake mix, £1.20, and add water plus eggs or aquafaba.

When baked, fill with Asda whipping cream, £1.35, and add some chopped Asda Just Essentials strawberries, £1,19.
You could also add a spoon of lemon curd, honey or jam.
Decorate with more cream and the rest of the fruit on top.
ROCKY SUMMER ROAD: The classic treat gets a summery upgrade and it’s a great way to use up leftover biscuits and snacks.
Crush biscuits and you could even add the last of favourite cereals and some melted chocolate.
Instead of marshmallows, maybe pop in chunks of bananas or tinned fruit.
Chill in a tray in the fridge and slice up into portions before the party begins.
PIMMS ETON MESS: Grab a pack of frozen summer fruit, £2.50, double cream, £1.35, and a packet of mint, 52p, all from Tesco.
Thaw the fruit, then add to the bottom of a large dish and tear up and add the mint before layering on double cream.
Bake your own meringue using egg whites and caster sugar and add icing sugar for sweetness.
Once baked and cooled, break into pieces and add a layer on top.
Keep in the fridge, add a splash of Pimm’s and mix it all up just before you go to the party.
