Fish pitta with peach salsa
(Serves two)
YOU NEED:
- 2 white pittas
- 300g salmon fillet, skinned and diced
- 1 tsp cajun seasoning
- 1 peach, chopped
- 1 small red onion, finely diced
- 1 clove garlic, crushed
- ½ red chilli, chopped
- 1 tbsp fresh coriander, chopped
- 1 lime, juice only
- 2 pinches salt and pepper
METHOD: Mix all the ingredients for the salsa (everything but the salmon, pittas and cajun seasoning) and season to taste.
Mix the diced salmon with the cajun spice, then place it on to a baking tray and cook at 180C/Gas 4 for five minutes (or until thoroughly cooked through).
Warm the pitta, split it and fill with the salmon. Top it with the salsa and serve.

Frogurt lollies
(Makes six)
YOU NEED:
- 250g raspberries
- 100g natural yoghurt
- 1 tsp honey
- 6 lolly moulds
METHOD: Blend the yoghurt and honey in a food processor. Taste and add more honey if needed.
Add 70g of the raspberries into a bowl and crush.
Layer the bottom of the lolly moulds with the crushed raspberries and spoon the yoghurt mixture equally on top.
Place the remainder of the fresh raspberries on top of each of the moulds.
Place the lolly stick into the centre of each of the moulds and put them in the freezer for at least four hours, or until solid. Serve and enjoy.
