People can be heard screaming at the violence takes place in front of stunned motorists.
Reports say two revellers were stabbed – but neither are believed to have suffered life-threatening injuries.
One terrified onlooker wrote on Facebook: "I can’t believe what I witnessed in Marble Arch whilst passing by on the bus.
"Young boys running around with large machete looking knifes, a whole leap of 16, 17, 18 year old girls & boys literally scattered everywhere, I was scared for all their lives.
"And what really shook me up was seeing the young black boy looked about 17 outside Hyde park with a stab wound to his chest.
"It was so heartbreaking, I called the ambulance from the bus as it literally just happened & just to make sure but no way was I getting off that bus it was so erratic buses had to stop, I saw police & no ambulance."
One of the officers was stabbed while another was hit by a bottle during the trouble in London’s Hyde Park.
A throng of around 1,000 youngsters had descended on the area around the park's Serpentine lake during yesterday scorching temperatures.
But when cops tried to disperse the crowd at around 9pm when a water fight broke out, it turned on the officers.
Many of the crowd were heard to chant "Black Lives Matter" - a slogan coined in the wake of police shootings of black youths in America.
The park was last night closed to the public as riot police were rushed in to control the crowds in the Marble Arch area.
Witness Timi Marcel tweeted: "Hyde Park is a bit of a war zone."
A large section of the crowd is believed to have arrived for an expected 'bashment' party - a popular music genre originating from Jamaican dancehall.
A Met spokesman said: "Police in Westminster were in attendance at Hyde Park, by the Serpentine, from 3pm on Tuesday, July 19, after a large number of people gathered for a spontaneous water fight.
"At around 8.40pm, parts of the increasingly large crowd become hostile to police and items – including bottles – were thrown towards officers.
"Two police officers suffered injuries – one stabbed and one from a bottle. Both have been taken to hospital for treatment.
"Their injuries are described as not life-threatening. Police are aware of two other people suffering stab wounds.
"Both have been taken to hospital, and officers await an update on their conditions.
"Officers remain at scene and continue to deal with the incident."
